DORINDA'S YUMMY BRUSSEL SPROUT COLESLAW RECIPE
(dedicated to her late god-daughter Alix)

Ingredients Serves 4

125g whole, fresh Brussel sprouts (about 8-12 sprouts depending on size. Personally, I prefer 8 large sprouts)
2 medium Nashi pears
1½ cups fresh cherry tomatoes or mini Romano tomatoes (about ½ a punnet)
1 cup unsalted or salted cashews (depending on personal preference)

Dressing

Juice of 1 fresh lime
⅓ cup Japanese Mirin seasoning (HONTERI - Mizkan brand)

Method

Trim off bases of Brussel sprouts.

Discard out two leaves and any other blemished leaves then slice each sprout very thinly into rounds.

Place chopped sprouts in a large salad bowl and using your clean hands, separate the fibres to loosen.

Wash and dry Nashi pears, discard the cores and seeds. Cut into quarters unpeeled and julienne each quarter into matchsticks.

Add to sprouts. Discard any stalks from the cherry tomatoes, wash and dry them and add to the sprouts and pears mix.

Combine dressing in a small jar and shake to mix well or stir combined dressing in a cup.

Drizzle over salad and stir well to coat all ingredients.

Toss through the cashew nuts and serve immediately.
