Almond Meal Pancakes Topped with Berries and Yoghurt.


Pancake Mix

1/3 cup almond meal
1 tbls yoghurt
1dsp Xylitol (optional)
1 egg
1 or 2 tbls water
1 tsp coconut oil
½ tsp baking soda

Yoghurt and Berry topping

1/3 cup organic plain yoghurt
½ cup strawberries
½ cup of blueberries
½ cup raspberries
1 dsp Xylitol (optional)


Pancake mix:

  1. Place ingredients in a mixer and blend together.
  2. Place a little coconut oil on a hot skillet.
  3. Divide mixture into 3 parts and cook on hot skillet and cook until golden brown.

Yoghurt and Berry topping

  1. Wash berries and trim strawberries and cut into quarters.
  2. Place ¼ berries and Xylitol in blender and blend until smooth.
  3. Place mixture on top of pancakes and scatter remaining berries.

Papaya and Avocado Salad with Lime and Ginger Dressing


4 cups of endive or mixed lettuce.
2 cups papaya
1 large avocado
2-4 green shallots

Lime and Ginger Dressing
¼ cup olive oil
¼ cup lime juice
1 tbls grated fresh ginger
¼ tsp mild curry powder



  1. Wash and chop endive.
  2. Peel, seed and cut papaya into cubes.
  3. Cut avocado in half, remove skin and chop into cubes
  4. Wash, trim and finely chop shallots
  5. Place ingredients into a salad bowl.

Lime and Ginger Dressing

  1. Combine ingredients in small container with lid and shake well.
  2. Pour mixture over salad and gently toss ingredients.

Raw Cashew & Macadamia Vegan Mock Cheese Cake

Pie Crust
2 cups macadamia nuts
½ cup pitted dates
¼ cup desiccated coconut

2 cups cashews-soaked overnight
¼ cup lemon juice
¼ cup agave juice
¼ cup warmed coconut oil
1 tsp pure vanilla essence
½ cup of water

1 bag of frozen raspberries or 2 punnets fresh raspberries freeze overnight.
½ cup pitted dates


Pie Crust

  1. Process the macadamia nuts and dates in the food processor.
  2. Sprinkle coconut onto the bottom of a 8” or 9” spring form pan to prevent sticking.
  3. Press crust mixture onto coconut and set aside.


  1. Rinse Cashes and place in blender.
  2. Add lemon juice, agave, vanilla, coconut oil and ½ cup of water, blend until smooth.
  3. Pour mixture into pie crust.
  4. Remove any air bubbles by tapping the pan on a table. 5.Place in freezer until firm and then place onto a serving platter.


  1. Process raspberries and dates in food processor until well blended (Do not use a blender for this as the raspberry seeds will become like sand.)
  2. Top filling with raspberry topping 3.Place cake in refrigerator to defrost until ready to serve.
