Shred lettuce and radish finely, place in stemmed glass.
Dollop sauce onto top of lettuce/radish mix.
Hang prawns over side of glass (heads down).
Broccoli & Cauliflower with white sauce
Steam broccoli and cauliflower to just tender
Grease an oven dish, place steamed veggies in.
Pour over white sauce, trying to cover all vegetables.
Place in 180C oven until bubbly
*additions � sprinkle some grated cheese into the sauce, or just over the top prior to baking
- sprinkle some breadcrumbs over the top before baking.
60 gm butter, melted
2 tblsn flour
2 cups milk (made from powdered will do)
Melt butter, add flour and stir until no lumps.
Keep stirring for about 1min.
Add milk all at once and stir until no lumps and thickens to desired consistency.
TOTAL COST = $0.93 for ~2 cups
Make up 1 litre of powdered milk (62c)
2 tblspn custard powder
2 tblspn sugar
Place 2 tablespoons of custard powder and 2 tablespoons of sugar in a bowl.
Blend a little of the milk in to form a thin paste.
Boil the remaining ~450ml of milk.
Important: MUST come to a boil.
As the milk is rising up the pan, carefully pour into the bowl with the paste, stirring gently.
It will get thicker on standing. If you like your custard thicker, add a bit more powder.
TOTAL COST = 47c/600ml
And here's an extra treat:
2 cups Rice Bubbles
1 cup desiccated coconut
1 cup icing sugar, sifted
1 cup milk powder
� cup sultanas
� cup chopped red glac� cherries
� cup chopped green glac� cherries
Lightly grease a 20 x 30cm slice pan. Line base and sides with alfoil, grease.
Place copha in a small pan on low heat to melt slowly, cool slightly.
Meanwhile, combine remaining ingredients in a large bowl. Add copha and mix well. Press mixture firmly into pan.
Place in fridge until set, then chill until ready to serve. Serve cut into small squares.
Store White Christmas in an airtight container in the fridge.

2 sheets of frozen shortcrust pastry, thawed
Jar of fruit mince
Grease patty tin
Cut 12 rounds (using a scone cutter or glass) from one sheet of pastry.
Cut 12 stars from the other (if no star cutter, circles or strips).
Place rounds into patty tins.
Drop 1 teaspoon of fruit mince into centre (don't over fill, as it will ooze everywhere!)
Cover with star shaped pastry.
Brush with a little milk or egg wash
Bake for 15 � 20 mins 180C or until golden.
